"Background"
Since the formation
of the Lincolnshire Deer Group in 1997 we have been increasingly aware that
the marketing of venison influences deer management. The management of the
wild deer population is often seen as an unfortunate chore/expense for
landowners, and is undertaken solely in response to damage.
Deer as a
sustainable resource and an important part of the county’s biodiversity deer
should be valued as an important, natural and economic part of our
landscape. Long-term sympathetic management of deer is likely to maintain
healthy populations and avoid the excessive damage that occurs when
management is only implemented in response to crisis.
Venison from these
lowland areas is natural, healthy, low fat meat and much under rated. It has
an image of being dry and very strong tasting and really not very nice to
eat. This is a complete misconception and needs to be addressed through
promotion and education.
The proposal is to
generate sustainable higher returns from the deer cull in the county for
members through the trading activities of a trading company “Lincolnshire
Wild Venison Limited”.
Through the
financial support of members, the Forestry Commission and the Wolds Advisory
service & deer group funds we have a processing facility based at Skirbeck
Farm, Benniworth, Nr Market Rasen and have been trading as a Lincolnshire
Wild Venison since January 2007.
